Slice the leek in half lengthways then wash it and thinly slice it into half-moons. Dice the red onion and bacon. Crush the garlic cloves. Set aside.
If you prefer your gnocchi crispy, air fry it for 15 mins with a glug of oil first to crisp up, then just add it in with the sauce! If going for this option, use ⅔ the amount of stock.
