Easy High-Protein Veggie Pasta

What started as a way of using up leftover cottage cheese in the fridge turned into what will now become a new staple! This is absolutely delicious and really high in protein for a vegetarian option. You could increase the protein by serving with some chicken or halloumi too!

I didn't use low fat cottage cheese here. The difference in calories is pretty marginal and this tastes way better. I used Milbona natural cottage cheese from Lidl. Note that the jarred peppers will add a vinegary taste, if you don’t like that then just rinse the peppers before adding to the blender!
