Hidden Veg Tikka Masala

You all know I love the hidden veggies - hidden veg pasta is a weekly staple for me, so I thought I’d have a go at making a curry using veg for the sauce and it was a winner! 🏆 Perfect for when you’re craving something that feels a little indulgent but also in need of some vitamins and minerals (2 of your 5 a day) 🤣 perfect for in a deficit too as it’s low in calories and high protein for a nice filling portion! I’m sure you could mix up the veggies to use up whatever you’ve got too.

Cook the veg in a pan (roasting works well too!) in the olive oil along with the garlic, chilli, ginger and salt for around 7 minutes until softened.
