One of my favourite classic toasted wraps but levelled up to be like enchiladas with the tomatoey salsa and gooey cheese on top! Just without the faff of transferring to the oven, although you could pop them under the grill once you put the salsa and cheese on top for more of a crispy finish if you fancy!
This is a really versatile recipe too, you could swap to use chicken or even pre-cooked shredded chicken to save even more time, and just chuck whatever veg you fancy into the mix!
