You can pretty much chuck whatever veggies you like into the hidden veg sauce. I always use onion, celery, carrot, tomatoes and mushrooms as a base then add whatever else I’ve got in the fridge such as peppers, aubergine, courgette. Tip: plum tomatoes taste sweeter than regular chopped tomatoes so they’re great in these sauces!
