Nando's Pasta Salad

This Nando's pasta salad is really easy to chuck together and works perfectly for meal prep as it's delicious cold. This comes out quite spicy, so if you like a little less spice then replace some of the Nando's sauce and perinaise with extra mayo or Greek yoghurt for an extra boost of protein! You could also add some lemon juice for an extra bit of zest!

Step 1

Get the pasta on to boil in a saucepan of salty water. Once cooked, drain and rinse with cold water to avoid it sticking together.

Step 2

Meanwhile, heat a spray of oil in a frying pan and add the chicken breast over a medium-high heat. Add the Nando’s rub and stir to coat for around 5 minutes.

Step 3

After 5 minutes, make some space in the middle of the pan and add another spray of oil. Add the halloumi and cook for a few minutes on either side until golden.

Step 4

Whilst it’s cooking, chop up the veg and add it to a large bowl. Add the cooked pasta and the Nando’s sauce, perinaise and mayo. Toss it all together then stir in the chicken and halloumi.

Step 5

Divide into dishes and top with a drizzle of sweet chilli jam.
