Chicken & Bacon Ranch Loaded Fries

Ranch flavours are just so flippin tasty!? Of course you could use a pre-made ranch dressing but this is pretty simple to chuck together and a lower calorie and higher protein option than a bottle from the supermarket so well worth it in my eyes! Check out my ‘chicken & bacon ranch style pasta’ for another way to use the same ingredients!

Step 1

Chop the potatoes into chips then microwave for 7 minutes to soften.

Step 2

Spray with some fry light, add some all purpose chip seasoning and pop them into the air fryer on 190°C for 15-20 minutes (or oven for 30-40), shaking them up every so often.

Step 3

Fry off your bacon in a spray of olive oil over a high heat for around 10 minutes until crispy.

Step 4

Meanwhile, dice your chicken breast.

Step 5

Once crispy, remove the bacon from the pan and add the chicken along with the parsley, chives, dill, garlic granules and onion powder.

Step 6

After around 10 minutes the chicken should be cooked. Reduce the heat to medium and add the milk, cream cheese, dijon mustard and lemon juice and stir to coat.

Step 7

Bring to a simmer for a few minutes until it thickens then stir in half of the grated cheese, half of the bacon bits and some chopped chives.

Step 8

Tip the chips into a bowl and top with the chicken mix, the remaining bacon bits and more chives.
