Honey Chipotle Chicken Traybake

This is a really simple but nutritious, balanced meal to chuck together without sacrificing on taste. Roasting in the oven plus the honey chipotle marinade really takes chicken, potatoes and veg to the next level and keeps it tasting juicy and sweet! It's a delicious flavour but you can easily mix it up by using the same base recipe but with different pastes and sauces like harissa or sweet chilli.

I use 'Gran Lucito' chipotle paste in this which is more spicy and flavoursome than supermarket own-brand. You may want to adjust the amount of paste used depending on the brand and how spicy you like it!
