Fibre focus (1)

If you're not aware of the benefits, fibre supports digestion and helps with regular bowel movements! It also leaves you feeling fuller for longer so it's great to focus on fibre intake when you're striving to be in a calorie deficit. It can also help support healthy blood sugar and cholesterol levels. It's recommended that adults consume 30g fibre per day in the UK, but studies show that many people don't get anywhere near that amount. If you don't currently eat much fibre, it's worth making a conscious effort to increase it, although I would recommend slowly increasing your intake to allow your digestive system to cope with the changes! Opting for wholegrain versions of things like pasta, rice and bread is a good way to easily increase your intake, as well as eating plenty of fruits and veggies. Here are some ideas for meals that will help to increase your intake!

The recipes

Biscoff Overnight Oats

The ultimate grab and go breakfast, although I like to have them as a mid-morning or afternoon snack or even as a dessert after dinner if I'm still hungry! If you have a sweet tooth having a few of these prepped in the fridge you'll thank yourself later!

Cheesy Beef and Bean Tacos

If you've been here for a while you'll know my love for soft-shell tacos! If you've never tried them then I highly suggest you do, they trump any restaurant or takeaway in my experience! I recommend 2-3 tacos for a portion if having as a meal. I used my batch-cooked taco-spiced beef mince for this recipe and used 1/3 of the big-batch, just adding it in from the fridge once the veggies are cooked (you can do this too - search taco beef mince to view the recipe separately!) but this recipe is super simple anyway so I’ve included all of the steps. The macros are almost identical whichever way you do it.

Chocolate Hazelnut Baked Oats

These meal prep baked oats are so easy to prepare. I have mine with some yoghurt for that hot/cold contrast and an extra protein boost! To reheat just pop it in the microwave for a minute, but they’re really yummy cold too! Calories and macros are for a slice with 100g Greek-style yoghurt + a drizzle of honey

Hot Honey Taco Beef Bowls

This dish has been going viral on social media recently and it's so nice to see a trend that is nutritious and high in protein! This is such a delicious flavour combination - I (unintentionally) made the beef mince quite spicy by using hot chilli powder but the cottage cheese/ yoghurt and avocado is such a nice cooling contrast! And I've always loved sweet potato cubes - I often even prep sweet potato cubes and just snack on them on their own!

Butternut Squash Hidden Veg Mac and Cheese

Guys I’m not kidding when I tell you this was one of my FAVE meals in sooo long. I’ve made butternut squash mac and cheese loads of times but this one was my best version yet! It's so creamy and cheesy and the perfect hint of sweetness from the roasted squash and onion but I promise it doesn’t taste at all vegetable-y so it’s a great way to sneak some nutrients in for kiddies (or fussy adults like me, hehe)
