Hidden Veg Spaghetti Bolognese

Ok I know it’s simple and you could easily google a spag bol recipe but if you like to sneak some extra veggies in either for yourself or for your kids then I urge you to give this one a try! It’s so delicious and tastes really good reheated too! See notes for storage and reheating instructions. WITHOUT the spaghetti, the bolognese is 221 calories per serving: 9g carbs, 7.5g fat, 28g protein

Turn cooking mode on

Step 1

Roughly chop the veg and add it to a large pan with 1/4 tbsp olive oil over a medium-high heat for around 5 minutes to soften. Transfer the contents of the pan to a blender/ food processor and blitz until smooth.

Notes

If you know you’re freezing and re-heating, one option is to just freeze the mix and boil some fresh pasta when you’re reheating the bolognese mix. In that case I would just recommend cooking the spaghetti to al dente so it doesn’t over-cook and go mushy after defrosting and reheating. Store in the freezer for up to 3 months then defrost overnight, add a splash of water and reheat either on the hob or in the microwave until piping hot.
