Smoky Halloumi Burritos

I had something similar to this from M&S recently and simply had to recreate it. They did not disappoint and were equally delicious when reheated the next day! I also tried the halloumi-soaking hack for the first time with this recipe and it worked a treat! Goodbye rubbery halloumi, hello crispy on the outside, soft on the inside halloumi. 😍

Slice the halloumi into thin slices and place in a bowl. Cover completely with boiling water and leave to soak for 20 minutes, then drain and pat dry.
