Pesto Basa Traybake with Crispy Pesto Potatoes

This is one of the recipes I made with my home-made pesto and it did not disappoint. Basa fish is a great option for high-protein on a budget - it's super affordable at only £1.79 for 2 fillets (from Tesco) and it was delicious with this pesto, mediterranean style veg and crispy potatoes!

Notes

If you don’t have an airfryer, you can just add the potatoes onto the baking tray - remove the fish fillets after 18 minutes then whack up the temperature to 200C and keep the potatoes and veg in for another 5 minutes or until crispy.
