Creamy Pesto Pasta with Halloumi

A super simple, speedy meal with a fairly high protein content for a veggie dish! You can switch up the flavours for this recipe too by swapping the pesto for other sauces like harissa, chipotle, hot honey, sweet chilli, etc. You can also mix up the pasta shape or even mix in your favourite veg/ salad for more of a pasta salad vibe, it's really yummy cold too!

Turn cooking mode on

Step 1

Heat a spray of olive oil in a frying pan over a medium-high heat and add the halloumi slices. Brush the tops of the halloumi slices with some pesto, and after a few minutes check to see whether they’re golden on the bottom. If so, flip them over and brush pesto on the other side. Once golden on both sides, set the halloumi aside.
