Parmesan Crusted Sweet Potatoes with Hot Honey Chicken and Herby Feta

I will NEVER roast a whole sweet potato again after making them like this - with or without the parmesan the potatoes caramelise and go deliciously crispy! Cooking it lower and slower makes them even more sticky and crispy but being the imapatient girl that I am, I microwaved it first to reduce the oven time and it still turned out so well. This is such a deliciously tasty combo and it feels really easy to do, I promise it will be a hit!

Wash the potatoes, dry them and prick them with a fork, then pop them into the microwave for 5 minutes to soften. Pre-heat the oven to 200C.

We had ours with roasted tomatoes (I just added them to the oven wrapped in foil for 5-10 minutes) and baby leaf salad which was perfect!
