Peri BBQ Pulled Chicken

Another batch cook base recipe and this time I used my good old slow cooker! I've also added hob option into the notes below. I used this to make 4 easy meals for me and my husband throughout the week. Turn cooking mode on

Step 1

Add the onion and peppers to the slow cooker, then add the chicken breasts. Combine the stock, passata, Nando’s rub, Worcester sauce and honey in a jug or bowl, whisk it together then pour it over the chicken.

Notes

- I use glass Tupperware dishes, and to reheat I just pop it into the microwave in the glass dish for 2-2.5 minutes or until piping hot. If I want to retain moisture/ sauciness I prop a lid loosely on top whilst reheating.
- If you don’t have a slow cooker you can add all of the ingredients to a sauce pan, bring to a boil then reduce and simmer for 45 minutes. You should then be able to shred the chicken using 2 forks.
