'Nduja Carbonara

I love carbonara with every fibre of my being, and I love 'nduja at restaurants but had never cooked with it before this, so when I saw it in Tesco I simply had to get my hands on it and give this a try! The flavours are delicious - it’s really rich and spicy so if you’re a spice lover, you’ll love this one! If you’re a bit of a wuss with spice like me, reducing the amount of 'nduja would still give you the flavour and the gorgeous golden-y colour but without blowing your head off! You could add an extra egg yolk and parmesan instead, or mix it up by adding some tomato paste, which would also reduce the calories too.

As mentioned in the intro, be warned this is a spicy one! You can reduce the 'nduja to reduce the heat and also the calories, and possibly add in some extra parmesan/ egg or even some cream or cream cheese I expect would work well! You could also add some chicken for a protein boost!
