Nando's Pulled Chicken Loaded Potatoes

This was such a yummy meal, I absolutely loved having leftovers for a couple of days! Anything Nando's and I'm sold, the peri rub is so good - if you haven't tried it then definitely do! I found this meal to be filling so had 1/4 as a portion, but if you're particularly hungry it might be more suited to 3. For 1/3 of the recipe it's 643 calories - 62g carbs, 13g fat, 60.5g protein. If there are 4 hungry people perhaps just do 1kg of potatoes to bulk it out, it'll still be a really high protein meal!
