Family-friendly Peanut Chicken Curry

Since we've been weaning Casey I've been trialling recipes that I can make for all of us to enjoy with just a few little adaptations so I'll be posting some baby-friendly recipes going forwards. The goal with these recipes is to have a good balance of iron, protein, carbs, healthy fats and micronutrients. For these recipes I’ll post the adult version as the main recipe (with some lower calorie options where possible) and write out options for adaptations in the notes!

Notes

  • I've used light coconut milk within the recipe for adults which makes it slightly lower calorie. If cooking for babies, sub for full fat.

  • Leave a few chicken breast pieces plain for baby - just marinate the ones for the adults. Cook them on the same tray at the same time

  • Once you’ve blended the ingredients for the sauce, keep some reserved for baby. Add the cooked plain chicken pieces to the food processor and blitz it together for baby, before adding the extra spinach, salt and pepper in the pan for the adult portions.

  • We had a portion each for me and Billy, leftovers for both of us and a few portions for Casey!

Without the rice, 1/5 of the recipe is: 428 calories per portion

We had ours with rice (included in recipe and macros) and also some naan. Casey had some rice blended up in his, but you could serve the rice separately (it's suitable from 6 months - I just hadn't realised this at the time!)

I was bit sceptical especially with the sweet potato. It's delicious, I would highly recommend giving it a go.
