Leeky Potato Bake

This is a recipe my mum used to make all the time and it’s absolutely delicious. It’s surprisingly simple to make and tastes creamy and indulgent without needing to use any cream at all, it’s actually really high in protein and low in calories! Pair with a protein source and some veg of your choice for a balanced, super high-protein meal. With a chicken breast and peas the recipe comes to 562 calories and 56g protein!

Chop up your bacon medallions and add to a cold frying pan with the ½ tbsp oil. Turn the heat up to high and fry until crispy, then remove half from the pan and set aside to add on top later.
