Home-made Pesto

I made my own pesto mostly just because I wanted Casey (my 7 m/o baby) to have some but I have to say that I am converted! Not only does he love it, but I way prefer my version to a store bought one. I added spinach for extra nutrients and made it a bit more nutty and less oily too so it feels healthier and is slightly less of an over-powering flavour than jarred pesto. Turn cooking mode on

Step 1

Toast the pine nuts by adding them to a frying pan over a medium-high heat for around 5 minutes, stirring every so often, until they turn a golden-brown colour.

  • The recipe makes approximately 250g of pesto. The nutritional values are for 25g.
    The nutritional values per 100g are: 436 calories, 6.4g carbs, 42g fat, 9.5g protein

  • I highly recommend freezing some in ice cube trays then just popping out a few cubes at a time depending on how much you need! You can defrost in the microwave or on the hob.

  • I’ve made creamy pesto pasta using our freezer stash more times than I can count, me and Casey love it! I add a few cubes straight into a pan over a low-medium heat with a splash of milk while I cook some pasta in a saucepan, then chuck the cooked pasta in and mix it all together! I add some pasta water to loosen it up if needed and usually add some extra cheese, cream cheese or chopped veggies like tomatoes or red onion too, or maybe some cooked chicken pieces.
