I actually used some home-made pesto sauce for this (you can find it by searching ‘pesto potato bake’ but I calculated the macros based on regular reduced fat pesto. Be careful not to overcook orzo, especially if you’re making extra and re-heating as it could end up going mushy. Orzo cooks quicker than normal pasta, so keep an eye on it!
