Chicken Pad Kra Pao

This was another of my favourite dishes whilst in Thailand! It's so easy to make, especially if you just serve with microwaveable sticky or jasmine rice and it's packed with flavour. The actual chicken dish is ready in just over 10 minutes! The calories include 75g (dry) or 235g (cooked) jasmine rice per person. The calories do not include the egg, but I think it really makes this dish if you like eggs! With with a medium fried egg the total calories come to 605 with 37g protein.

Turn cooking mode on

Step 1

If cooking your own rice, rinse and add to a saucepan of 460ml salty water. Bring to the boil then reduce to a gentle simmer, and cover for 15 minutes. Give it a stir half way through cooking. Test it after 15 minutes - you may need to add a splash of water and continue to cook for a few more minutes but if the rice is tender just take it off the heat and keep the lid on so it goes nice and sticky!
