Chilli Con Carne

This is my go-to chilli recipe that we make almost every week. I bang on about chilli a lot as along with my hidden veg pasta, it’s truly my number 1 staple meal. It’s just so versatile and I’ve made loads of variations with chilli (just search ‘chilli’) but the OG, with some boiled white rice and avocado has to be my number one favourite. I sometimes switch the beef up for turkey mince too.

Notes

Chilli is perfect for meal prep too as it tastes even better the next day! For ⅕ of the recipe plus 125g cooked rice + 50g avocado, this comes to 602 cals + 36g protein - I mix up the beans that I add to mine for a bit of variety 🤪 you can also mash some of the beans to thicken the texture a little. - Add chilli or chipotle paste for a spicy twist 🌶️ - Always make extra!!! I refridgerate it for up to 5 days and it’s always been fine for me on a Friday after prepping on a Sunday! - Serve with rice, jackets, nachos, wraps, you name it. The most versatile dish ever 🫱🏼‍🫲🏽
