Sheet Pan Lemon, White Chocolate and Blueberry Protein Pancake Slices

These are soooo delicious they’ve become my go-to sweet snack prep the last few weeks. I recently uploaded a regular chocolate chip version but this white chocolate, lemon and blueberry combo is amazing. They work brilliantly for breakfast too - I like to serve mine with yoghurt and some fruit.

Notes

Avoid over-baking as they’ll go dry.
