Sausage Ragu Loaded Potatoes

This is such a yummy, hearty, comforting meal. The sausage ragu would pair nicely with pasta too or even rice, but I loved having it with potatoes for a nice twist! The recipe serves 3-4. You could easily pad it out with more potatoes as this recipe was quite sausage heavy but we served ours with some veg and it was delicious.
