Lemon Meringue Protein Pancakes

This is a cheeky recipe from my cookbook but with pancake day fast approaching, these are just too good not to share with you on here too! You'll find a couple of other pancake recipes on here - one uses protein powder and one is more of a crepe recipe without a focus on high-protein, but this one is the best of both worlds as it's super high in protein (34g!) without the use of any protein powder.

Notes

A non-stick frying pan is the MVP when it comes to pancakes. If you don’t have a non-stick pan, you will need to use more oil or butter to stop it from sticking. If you do want to add protein powder, you can substitute some of the flour for protein powder. White chocolate or vanilla flavour would work nicely, but bear in mind this will make them extra sweet and also makes them slightly spongier in texture. Swapping the egg whites for eggs works, but note that this will lower the protein and increase the fat content of the dish.
