Protein Squares Bars

I’d like to introduce you to my latest snack obsession! They’re chewy and slightly crispy, like a squares bar but a little more chewy and creamy, plus higher in protein and lower in refined sugar. You can use corn cakes or rice cakes for this - I used corn thins here but rice cakes make a slightly softer texture!

Notes

Peanut butter notes...

I use Pip & Nut peanut butter which is quite runny. If you have a drier peanut butter you might need less of the peanut butter powder, or you could add a little extra yoghurt. If you don't have the peanut butter powder you can sub for an extra 10g peanut butter and reduce the yoghurt slightly.

If you don't like peanut butter, the best swap would be almond, cashew butter or tahini. Alternatively, something like Biscoff spread would work but increase the amount of sugar.
