Cheesy Taco Beef Rice

This is one of my go-to meals as it's macro-friendly but super easy and quick to chuck together. You can mix up the flavours by using different protein sources, spices and rice flavours too - piri chicken is another of my faves. I used my batch-cooked taco-spiced beef mince for this recipe and used 1/3 of the big-batch, just adding it in from the fridge once the veggies are cooked (you can do this too - search taco beef mince to view the recipe separately!) but this recipe is super simple anyway so I’ve included all of the steps. The macros are almost identical whichever way you do it.

Turn cooking mode on

Step 1

Add the beef mince to a large pan with a spray of olive oil and cook over a medium-high heat until browned, breaking it up with a spatula or whisk. Stir in the tomato puree and all of the herbs and spices for a few minutes, then set the beef aside.

  • This makes a large portion if serving 2. If you split the recipe into thirds, each portion is 410 calories - 30g carbs, 15g fat, 36g protein.

  • You can use batch-cooked taco-spiced beef mince to speed up the recipe; just add it in once the veggies are cooked (search taco beef mince to view the recipe separately!). Using a whisk to break up beef mince is a useful hack.
