Gochujang Pork One-pot Rice

Another delicioussss one-pot rice dish! I really think pork mince is so underrated - it's a great source of protein and low in calories if you get the 5% fat version and it's cheap and quick and easy to cook too. I'd recommend serving this with some extra veg or just add it into the dish - maybe another pepper or onion and/or some broccoli, peas or green beans for the last 10 minutes to pack it out a little more as it's quite a rice-heavy dish.
