Chicken & Chorizo Tomato Risotto

I used to think it would be tricky to cook risotto and find it a lot of effort to be ladling in a bit of liquid at a time as suggested in a lot of recipes until I realised that it tastes no different whatsoever if you just pour all the liquid in at once!! (in my experience anyway - I’m sure a proper chef would disagree but we’re all about speed and ease here!) Just give it a quick stir every 2-3 minutes and it turns out delicious 👌🏼 This dish is kinda paella vibes and soooo yum! It does taste best fresh but still pretty daaamn good just adding a bit of water and reheating until piping hot if you’re like me and always like to make extra.
